Serves 4

Ingredients:

Salad:

  • 1 tin of chickpeas
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 large tomato
  • 1 tbsp parsley, fresh
  • 1 tbsp mint, fresh
  • 1 tbsp olive oil
  • 1/2 lemon, juice
  • 1/4 tsp cumin

Dressing:

  • 100g Probio7 Life Yogurt
  • 1 tsp tahini
  • 1 tsp olive oil
  • 1/2 lemon, juice
  • 1/4 tsp cumin
  • 1/2 tsp harissa
  • Salt and pepper to taste

Method:

  • Drain the chickpeas and leave aside
  • In a separate bowl, prepare the dressing by mixing together 100g yoghurt, 1tsp tahini, 1 tsp olive oil, the juice of ½ a lemon, ½ tsp cumin, salt, pepper and 1 tsp harissa
  • Put the cooled chickpeas into a bowl and add the chopped tomato and cucumber.
  • Season lightly with salt and pepper and a drizzle of olive oil. Add the tahini dressing over the chickpeas followed by some chopped up parsley and mint and some more lemon juice.
